15 Minute Spaghetti Squash Curry


A few months ago, my brother and sister-in-law came over for dinner and we each made our favorite Asian-style recipes to share with each other.  I made my Asian Lettuce Wraps and they made a Spaghetti Squash Curry.  I was astonished that such a tasty meal (and boy was it tasty!) was so quick and easy to prepare!  You can jazz it up with your favorite sautéed vegetables and/or proteins (I like tofu, red bell pepper, and mushrooms), or you can keep it simple and just serve it as is.   The simplicity of this delicious recipe, has made it into one of our regular family dinners.


15 Minute Spaghetti Squash Curry
Recipe Adapted From Family Fresh Cooking



INGREDIENTS
1 Large Spaghetti Squash (~6 cups cooked)
1 Can of Coconut Milk
1/2 Cup Natural Peanut Butter
1-2 Tbsp Red Curry Paste (depending on heat preference)
1 Tbsp Soy Sauce
2 Tbsp Fish Sauce
2 tsp Toasted Sesame Oil
1/8 tsp Ground Ginger
1/8 tsp Ground Cinnamon
2 Tbsp Brown Sugar
Sautéed Veggies and/or Protein
Garnishes: Lime Wedges, Cilantro, Chopped Peanuts, Sriracha


DIRECTIONS

1.  Pierce your spaghetti squash with a knife or fork several times and microwave for 5 minutes.  Rotate, and then microwave for another 5 minutes.  Then, depending on the size of the squash it will either be ready, or need to be rotated and microwave for an additional 5 minutes. You'll know it's done when you can easily pierce the squash with a knife.  Once it's cool enough to handle, cut the spaghetti squash in half, lengthwise.  Using a spoon, scoop out and discard the seeds.


2.  Meanwhile, in a medium sauce pan over medium heat, stir together the coconut milk, peanut butter, red curry paste, soy sauce, fish sauce, sesame oil, ginger, cinnamon and brown sugar.  Once all is combined and warm, remove from heat.

3.  Using a fork, scrape the sides of the spaghetti squash until you have removed all the spaghetti strings and put into a large bowl.  Pour over the curry sauce and sautéed vegetables and/or protein, and stir to combine.  Serve with your favorite garnishments (cilantro, chopped peanuts, lime wedges, Sriracha, etc.).
