Coca Cola Cake

My mom made a lot of fun cakes when I was growing up.  As a true Southerner, of course one of those cakes was a Coca Cola cake.  It's delicious!  

Coca Cola Cake

Cake Ingredients

2 Cups White Sugar
2 Cups Flour
1 Cup Butter
3 Tbsp Cocoa Powder
1 Cup Coca Cola
1/2 Cup Buttermilk
1 tsp Baking Soda
2 Eggs
1 tsp Vanilla
1 1/2 Cups small marshmallows

Cake Directions
Mix sugar and flour in a bowl.

In a pot over medium heat, melt the butter and then add in cocoa powder and Coca Cola.  Bring to a boil and cook for 1 minute.  Pour mixture into the bowl with the flour & sugar.

Stir in Buttermilk, baking soda, eggs, and vanilla.   Stir until smooth and then stir in the marshmallows.

Pour into a greased 9x13 pan and bake at 350 for 45 minutes.

Chocolate Icing Ingredients
1/2 Cup Butter
3 Tbsp Cocoa
5 Tbsp Coca Cola
1 Box Powdered Sugar
1 tsp Vanilla

Icing Directions
In a pan heat up butter, cocoa powder, and Coca Cola.  Stir constantly. Once it reaches a boil, remove from heat.

Add powdered sugar and vanilla and mix well.

Spread on warm cake.
