Instant Pot Sous Vide Egg Bites


I am currently obsessed with Starbuck's Sous Vide Egg Bites, so when I saw Food & Wine's copycat recipe using the Instant Pot, I had to give it a try!  It's a really flexible recipe, so you can switch out ingredients to your liking.  I made one batch with just spinach and ham and called it "Green Eggs and Ham" for my children, and then made another with roasted red peppers and hot sauce for myself.  I did alter Food & Wine's cooking time, because I used bigger size jars.  You may have to play around with yours to see what time works best for yours.  If it comes out a bit undone, just throw it under the broiler in your oven for a few minutes until it's cooked completely through!


INGREDIENTS
  • 4 Whole Eggs 
  • 2/3 cup Monterey Jack Cheese
  • 1/2 cup Cottage Cheese
  • 1/2 cup Roasted Red Peppers
  • 1/4 cup Greek Yogurt
  • cup Spinach
  • 1/2 tsp Salt
  • Dash Hot Sauce (optional)
  • Optional:  Diced ham, cooked sausage, or crumbled bacon 

DIRECTIONS
  1. Add the eggs, cheese, cottage cheese, red peppers, yogurt, spinach, salt, and hot sauce to the blender and blend until very smooth 
  2. Grease four 8 oz glass mason jars with cooking spray and divide the meat (if using) into the bottom of each cup.  Fill each cup 3/4s of the way to the top with the egg mixture.
  3. Put 1.5 cups of water in the bottom of your Instant Pot, and then place in the trivet that came with your pot.
  4. Cover each mason jar loosely with foil and place gently in the Instant Pot on top of the trivet.
  5. Place the cover on the Instant Pot and select "Steam" and set to 10 Minutes.  Make sure the valve is turned to "sealing".  
  6. Once the timer goes off, quick release by turning the knob on top to release pressure.
  7. Carefully remove the jars from the Instant Pot and let cool down for about 10 minutes.  Tip the jars upside down to slide the egg bites out of the jar either onto a plate to eat immediately or into a container which then can be refrigerated for up to a week.  It reheats well in the microwave!
