Slow Cooker Salsa Chicken


The type of meals that my husband and I cook now are vastly different than the type of meals we cooked two years ago.  Before we were parents, we routinely made intricate, time-consuming meals, using only the finest ingredients.  We made as much as we could from scratch; why buy something already made, when we could make it ourselves healthier and tastier?  But then we had a baby. We no longer had hours available to us to cook.  For the first 3 months of my daughter's life, we lived off frozen dinners or already prepared casseroles.  It was awful for foodies like us.  Now that she is older, we have more time to cook, but not nearly as much as we did in our childless days.  I imagine things are only going to get worse as she gets older.  So meals like Salsa Chicken, another Pinterest find, are a must every now and then.  This recipe is ridiculously easy, and uses ingredients you can find in your pantry and freezer.

INGREDIENTS
1 pound Chicken Breasts (frozen is fine)
1 cup Salsa
1 can Condensed Cream of Chicken Soup
1 packet of Taco Seasoning
1/2 Cup Sour Cream
Valentina Hot Sauce (optional)
Crema (optional)
Lettuce & Tomato (optional)


DIRECTIONS

1. Place chicken in the slow cooker. Top with salsa, taco seasoning, and chicken soup.

2. Stir until mixed and set slow cooker to Low.

3. Cook on Low for 6-8 hours

4. Using 2 forks, shred the chicken

5. Mix in the sour cream.  Do a taste test; if you like it spicier, add in some hot sauce.



6. Put meat on tortillas and add lettuce and tomato if you desire. Roll it up!

7. Top with sour cream or crema.  Enjoy!

My thoughts?  I think it's pretty good.  It's not going to blow your mind, but it's tasty. I'm not used to using canned condensed soups, and I could taste it in the dish, which I didn't like, but I'm willing to bet that most people would not be bothered by this.  Next time I might try it without the condensed soup and just increase the amount of salsa, and see how it turns out.  

Tip:  Full fat sour cream is the best for mixing into a hot dish like this. We used reduced fat, but waited until the meat had cooled some before adding it in.
