Slow Cooker Buffalo Chicken


I saw a recipe for Slow Cooker Buffalo Chicken on Pinterest recently, and knew I had to try it out. The original recipe is from My Kitchen Apron. I changed the recipe just a tad.




INGREDIENTS
2 lbs of boneless chicken breasts (frozen or unfrozen)
One bottle of Buffalo Sauce (Frank's is recommended)
1/2 packet Hidden Valley Ranch Dip Mix (or your own seasonings)
1/2 tbsp butter


DIRECTIONS

1. Throw Chicken, Buffalo Sauce, and Ranch Mix into the Slow Cooker, stir.

2. Cook on Low for 6-7 hours

3. Using 2 forks, shred the chicken in the Slow Cooker; it should fall apart easily. 

4. Stir in the butter.

5. And that's it! I take out some to use for dinner, and freeze the rest in 2 batches, so I can easily grab and defrost a pound for a dinner in the future.

So you might be wondering what you can do with this huge amount of delicious buffalo chicken? Well, if you love buffalo chicken as much as me, the sky is the limit.  Here are some of the plans I have for it:


Buffalo Chicken Sandwiches or Wraps (serve on buns/wraps with arugula, avocado, and blue cheese dressing)

Buffalo Chicken Pizza (top dough with blue cheese dressing, chicken, and mozzarella)

Buffalo Chicken Dip (stir 8 ounces of cream cheese into the slow cooker after the chicken has finished cooking)

Slow Cooker Buffalo Chicken

INGREDIENTS

1/2 tbsp butter

DIRECTIONS
1. Place chicken, dip mix, and buffalo sauce in the slow cooker
2. Cook on low for 6-7 hours. Shred with 2 forks.
3. Stir in butter and serve.
