Earlier this year, I created a recipe called Skinny Chocolate Cheesecake Squares. The recipe is ridiculously easy, quick, and low in calories, so it's no surprise that it became the most popular dessert recipe on my blog. Due to its popularity, I decided to create a basic non-chocolate version of it, for those that prefer their cheesecake more traditional. Feel free to top it with your favorite fruit!
Skinny Cheesecake Squares
INGREDIENTS
1 Cup Low Fat Cottage Cheese
2 Tbsp Light Cream Cheese
1/4 Cup Unsweetened Almond Milk (or Milk of Choice)
1 1/2 Tbsp Freshly Squeezed Lemon Juice
1 Large Egg
2/3 Cup White Sugar
1/2 Cup Old Fashioned Rolled Oats
1 tsp Vanilla Extract
1/2 tsp Salt
DIRECTIONS
1. Preheat the oven to 350 degrees and grease an 8 x 8 glass baking dish.
2. Add all the ingredients, in the order listed, into a food processor. Puree until completely smooth.
3. Pour mixture into the greased baking dish and bake for 27 to 30 minutes, or until a toothpick comes out mostly clean, being very careful not to overcook.
4. Chill and cut into 12 squares when ready to serve.
