Blueberry Spelt Bread


Looking for a healthy breakfast or snack that tastes more like a treat?  Let me suggest baking a loaf of Blueberry Spelt Bread.  This recipe is from the fabulous blog My Whole Food Life, which always has great healthy recipes that don't taste healthy.  Blueberry Spelt Bread is a breeze to make, and tastes delicious to boot.  

Blueberry Spelt Bread
Recipe Adapted from My Whole Food Life

INGREDIENTS
1 1/2 Cups Spelt Flour
1 tsp Baking Powder
1/2 tsp Salt
3/4 Cups Almond Milk (or milk of choice)
1/3 Cup Maple Syrup
1/4 Cup Unsweetened Applesauce
1 Egg
1 Tbsp Coconut Oil
1 1/2 tsp Vanilla Extract
1 Cup Blueberries (I thawed frozen blueberries)

DIRECTIONS

1.  Preheat the oven to 350 degrees. Grease a loaf pan.

2.  Mix all the dry ingredients in a medium bowl and all the wet ingredients in another bowl.

3.  Combine the dry ingredients into the wet ingredients, and then fold in the blueberries.

4.  Pour into the loaf pan and bake at 350 for 35 minutes or until toothpick comes out clean.
