Apple Almond Fudge


I recently stumbled upon a recipe for All Natural Apple and Almond Butter Fudge on a blog called Inspired Edibles.  I loved that the recipe was completely made up of healthy and unprocessed ingredients.  It was a breeze to make, and every single person I've served it to has loved it: including my VERY picky toddler who pretty much hates everything.  I had originally thought it would make a good dessert, but after trying it, I feel like it makes an even better snack.  It's filled with protein and healthy fats, so it keeps you nice and full during those long stretches between meals.  



Apple Almond Fudge
Recipe Adapted From Inspired Edibles

INGREDIENTS
1/2 Cup Coconut Oil
1/2 Cup Unsweetened Applesauce
1/2 Cup Almond Butter
2 Tbsp Maple Syrup (or Honey)
A few pinches of Salt

DIRECTIONS

1. In a glass measuring cup, measure out the coconut oil. Microwave until coconut oil has melted (try not to let it get too hot). Pour oil into a medium bowl.

2. In the now-empty glass measuring cup (don't clean out the oil; it will help the later ingredients pour out easier), measure out the almond butter, and then add to the bowl. Next do the same for both the applesauce and the maple syrup.

3.  Add a few pinches of salt. Stir until all the ingredients are well combined and smooth.

4. Line a glass baking dish (I used an 8 x 8) with plastic wrap.  Smooth the wrap so that it is flat against the bottom and sides.  Pour the fudge over the plastic wrap, making sure it is spread evenly.  Freeze for one hour.

5. Remove from freezer, and grab the sides of the plastic wrap, and lift straight up--thereby picking up the fudge from the baking dish.  Flip it upside down onto a cutting board, and peel the plastic wrap off the fudge.  Cut the fudge into 16 squares, and store in an airtight container with wax paper separating the layers so they don't stick together.  Do this step relatively fast, because the fudge will start to melt after sitting out a while.

6. Store in the fridge or freezer. Remove the fudge immediately prior to eating; because it's made with coconut oil, it will start to melt at room temperature.

  1. SUPER ridiculously tasty! AND to make it even easier, I simply added all the ingredients in the measuring cup, since it ends up 1.5 cups of stuff, the 2 cup guy works great. A little FYI though...cold applesauce definitely solidifies the coconut oil but a little microwave action fixes everything. :-) Yummers!
