Zesty Turkey Burgers with Sriracha Mayo

As you have likely noticed, I'm a big fan of Pinterest.  When it's time for me to do my meal planning for the week, I look at my "Healthy Food" board on Pinterest, and make whatever recipe photo catches my eye.  This week, Kitchen Confidante's picture of their Cilantro-Sriracha Turkey Burgers was what made my stomach growl.  Since my tummy had spoken, I made these Zesty Turkey Burgers, and they were fabulous.  Easy to make, healthy to ingest, heaven to eat.  Win, win, win.

Zesty Turkey Burgers
With Sriracha Mayonnaise
Recipe Adapted from Kitchen Confidante

INGREDIENTS

TURKEY PATTIES:
1 lb 93% Lean Ground Turkey
1/4 Cup Corn Kernels
1/4 Cup Black Beans
1/8 Cup Diced JalapeƱo
2-3 Garlic Cloves, minced
1/4 Cup Chopped Cilantro
1 Tbsp Sriracha Sauce
1/2 tsp Onion Powder
1/2 tsp Cumin Powder
1/2 tsp Ground Coriander
1 tsp Kosher Salt

SRIRACHA MAYONNAISE:
1/4 Cup Mayonnaise
1 Tbsp Sriracha, or to taste

AND THE REST:
4 Wheat Buns
1 Avocado, sliced
Shredded Cabbage or Broccoli Slaw

DIRECTIONS

1.  In a medium bowl, combine all the ingredients for the turkey patties.  Mix together, being careful not to over mix (it'll make the meat tough).  Form into 4 evenly sized patties.  Make sure they are pretty thin, because they will plump and round when you cook it. I like press my thumb down on the middle of the patty to make an indentation.

2.  Meanwhile, in a small bowl, combine the mayonnaise and Sriracha, stir, and set aside.

3.  Heat a large greased skillet over medium heat.  Place in the patties and cook 5-6 minutes a side, or until center is no longer pink.  Take off the heat.

4.  Spread the Sriracha Mayonnaise on the inside of the wheat bun, and then place the turkey burger on the bun.  Top with sliced avocado and shredded cabbage.
