Most slow cooker recipes are basically the same old boring chicken or beef recipe, so I'm always on the lookout for more original and creative slow cooker recipes. I recently found a recipe for Crock Pot Garam Masala on a blog called Peanut Butter Fingers, and I was intrigued by the seasoning it utilized. I had never cooked with Garam Masala before, so I didn't know quite what to expect. Turns out that Garam Masala is an intense mixture of Indian spices; an aromatic blend that really jazzed up the normally bland ingredients of chicken and cauliflower. The dish was easy to make, delicious, and healthy. I felt like it needed a little heat, so I stirred in a generous amount of Sriracha Sauce, and it was just perfect.
Slow Cooker Garam Masala Chicken
*Recipe Adapted from Peanut Butter Fingers*
Serves 5-6
INGREDIENTS
1 Onion, diced
1 Head of Cauliflower, chopped into florets
28 oz can Crushed Tomatoes
2 (15 oz) cans of Garbanzo Beans (Chickpeas), rinsed & drained
3 tsp Garam Masala
1 tsp Garlic Powder
1 tsp Salt
1.5 lbs Chicken Thighs
1/2 Cup Cilantro, chopped
1/2 Cup Plain Yogurt (I used non-fat Greek)
Sriracha Sauce (optional)
DIRECTIONS
1. Place onion, cauliflower, crushed tomatoes, chickpeas, and seasonings into a crock pot. Stir. Add in chicken, and spoon the tomato-cauliflower mixture over the chicken, so that it's smothered.
2. Cook on low for 7-8 hours.
3. Serve in bowls with a dollop of yogurt and a sprinkling of cilantro. If you like your food spicy, stir in your desired amount of Sriracha Sauce.
