Asian Lettuce Wraps


I stumbled upon a recipe for Asian Lettuce Wraps last week and realized that I have never tried lettuce wraps before! This particular recipe, from Iowa Girl Eats, is meant to be a lighter version of P.F. Chang's Lettuce Wraps.  Since I have never eaten them, I can't say whether they were similar to them or not. I can, however, say that they were absolutely delicious.  I changed the original recipe around a bit, and I used PB2 instead of regular peanut butter to save on calories.  I served the Asian Lettuce Wraps with a side of Spicy Sweet Potato Fries, and it ended up being one of the best meals I've had in a while. Bonus? It took under 30 minutes to make.

Asian Lettuce Wraps
*Recipe Adapted from Iowa Girl Eats*
Serves 4


INGREDIENTS
1 lb Ground Chicken
1/2 Onion, diced
3 Cloves of Garlic, minced
1 Tbsp Fresh Ginger, minced
1 Tbsp Sesame Oil
3 Tbsp Soy Sauce
3 Tbsp Rice Vinegar
1 Tbsp Water
3 Tbsp Natural Peanut Butter or PB2 or Better n Peanut Butter
1 Tbsp Honey
2 tsp Sriracha Sauce
8 oz Sliced Water Chestnuts, chopped
Salt  & Pepper, to taste
1/4 Cup Chopped Peanuts
8 Large Outer Lettuce Leaves
Extra Sriracha Sauce

DIRECTIONS

1. In a large skillet, over medium-high heat, cook the chicken and onions until the chicken is no longer pink.  Add in the minced garlic and ginger, and saute for two more minutes.

2. While the chicken is cooking, in a small microwavable bowl (I used a glass measuring cup), combine the sesame oil, soy sauce, rice vinegar, water, peanut butter, honey, and Sriracha Sauce. Microwave for 30 seconds, stir, and repeat until completely mixed together. 

3. Turn the heat for the chicken-onion mixture down to medium-low. Pour the sauce over the chicken, and add in the water chestnuts. Salt & Pepper.  Stir and cook for a few more minutes until heated through.

4. Take off the heat, and sprinkle with chopped peanuts.  Serve a hearty scoop in each lettuce leaf, and top with additional Sriracha sauce if you like extra heat.  Roll and eat!

  2. Great Recipe! We added a spicy Sesame Oil for a little kick. Turned out to be just the right amount of spicyness!

    1. In the Asian Section of the supermarket. It was right next to the regular sesame oil. It was called fiery toasted sesame oil.
